We take pastry seriously here a at Olivias. All of our pastry is made from scratch and takes us 3 days! On day one we start by mixing the dough and portioning it out. We then let is rest overnight in the fridge. On day two we get on to the fun part! Laminating butter and dough to create all the layers followed by shaping all of our croissants, pain au chocolats, cruffins, crookies and so on. We then leave our pastry resting overnight, proving ready to be baked on the third day. Bright and early, ready to be delivered to our two cafes and all of our wholesale partners.
By the way, keep an eye out for our vegan pastry, some of our freshly baked pastry is fully vegan!
